Some of the most intriguing signals are coming from unexpected combinations: high-protein brownies are up more than 400% year over year, while emerging takes on classic cheesecakes are posting triple-digit growth.
What makes the opportunity particularly compelling is that much of the innovation is happening before brands even enter the picture. Consumers are experimenting at home, using ingredients such as Greek yogurt, cottage cheese, chia, plant-based alternatives, and sugar substitutes to make traditional treats fit new nutritional expectations. The data suggests functional dessert is also moving beyond a single benefit like protein toward a broader spectrum of needs, without losing the emotional appeal that makes dessert dessert. For brands, the report points to a potentially significant white space: translating the behaviors already gaining traction in consumers’ kitchens and social feeds into convenient, craveable products built for the next generation of indulgence.
