Unlike most packaged foods, which are built on enriched wheat flour, Unrefined Foods starts every recipe with organic whole grains, stone-milled fresh with the bran and germ intact. While enriched flour that we find in grocery stores today has been stripped of much of the grain's natural nutrition before synthetic vitamins are added back, stone-milling preserves the entire grain, retaining its naturally occurring nutrients, fiber and rich flavor.
“Fresh-milled whole grains are a completely different food. If we baked our muffins with the whole wheat flour on grocery shelves, they’d taste like cardboard,” adds Bermudez. “Ours taste good because the grain is fresh.”
While conventional shelf-stable muffins lean on sugar and oil to keep them fresh on the shelves, Unrefined Foods are sweetened only with maple syrup and skip the preservatives. Freezing naturally preserves freshness while protecting the grain's nutrients and oils. "The freezer isn't where good food goes to die.
