AHUALULCO DE MERCADO, JALISCO, MEXICO - Since 1573, Hacienda El Carmen has grown alongside the Ahualulco Valley. Its story has been written through harvests, restoration, hospitality, and the families who have cared for the estate generation after generation. Led by Monica Baeza and her two daughters, Moni and Gaby, Hacienda El Carmen is in its full glory, thriving as a farm, historic hotel, luxury spa, and, most recently, a distillery.

In 2022, inspired by 300 years of farming sugar cane, Hacienda El Carmen produced its first batch of Ron Pelacañas, laying down barrels of rum and sharing with hotel guests and the local community. In 2024, Pelacañas launched in the U.S. market with two unaged rums: Blanco at 44% and Llamarada, the still strength. Today, that story continues with the release of Pelacañas SOLERA Edition Zero, for more technical information.

Edition Zero is the inaugural aged rum release from the estate's four-tier solera, which has quietly taken shape since the first barrels were filled in 2022. A solera is a living aging system in which mature spirit is drawn from the oldest barrels and replaced with younger spirit from the next tier, allowing each release to carry forward a small part of every harvest that came before. Unlike future editions, which will become part of an ongoing cycle of replenishment, Edition Zero is a blend of the oldest rums produced in the 2022/23 production year. 15 liters were taken from 45 barrels, blended, and bottled at batch proof, without water. This made room for the first cascade, beginning the mingling of vintages. Edition Zero is unique, as it's the only batch of Pelacañas Solera made of a single vintage.

Like the estate itself, the solera grows through continuity rather than replacement. Every harvest contributes to the next. Every barrel carries a piece of those that came before. Pelacañas is produced entirely at Hacienda El Carmen, where estate-grown sugarcane is harvested, fermented in open-top vats, double distilled, matured in American oak ex-whiskey barrels, and bottled without ever leaving the property. The result is more than an estate rum. It is another way for Hacienda El Carmen to share its history. SOLERA Edition Zero is not simply the first release from a solera. It is the first release from a story that will continue with every harvest for generations to come.

"When we began making rum, we weren't looking for another business," said Mónica Baeza. "We were looking for another way to share the place we love."

Pelacañas Solera will be available by the end of this summer in 20 U.S. states and online in 48 states plus D.C. from the Lot001 Website. We expect retail to be priced between $70-$80, bottled in 750ml.
