The footwear brand returns to its New York roots with a 150-bottle release crafted in partnership with Pollinator Spirits and PM Spirits

NEW YORK, NY – October 2026 – Thursday Boot Company, the direct-to-consumer footwear brand known for its commitment to quality craftsmanship and accessible design, is raising a glass to its roots with the launch of its latest limited-edition whiskey collaboration, created in partnership with Pollinator Spirits and PM Spirits.

Available nationally beginning Thursday, October 15, the highly limited release consists of just 150 bottles of a 100-proof New York State Rye, crafted entirely on-site at Pollinator Spirits in the Western Catskills.

Made with organic and heirloom New York grains and mountain well water, the whiskey was distilled in October 2019 and aged in new American oak, naturally maturing through the Catskills’ changing seasons. The result is a distinctly New York expression featuring tasting notes of cinnamon, toasted nuts, rye bread, clove and orange peel.

The collaboration represents a natural extension of Thursday Boot Company’s longstanding connection to craftsmanship, community and New York City culture.

Before Thursday had a website or brick-and-mortar stores, co-founders Connor Wilson and Nolan Walsh built the brand one conversation — and often one drink — at a time, hosting boot fittings at bars throughout New York City. Those early gatherings helped establish a community around a shared appreciation for quality, craftsmanship and products made with intention.

Today, that same philosophy continues to shape the brand’s growing retail presence, with Thursday stores designed not simply as places to shop, but as spaces where customers can discover great products, connect with the brand and come together around shared interests.

For Wilson, an avid whiskey enthusiast, the collaboration also brings together two personal passions.

“Whiskey and boots have more in common than you might initially think,” said Connor Wilson, co-founder of Thursday Boot Company. “Both reward great materials, thoughtful craftsmanship and patience. This project was an opportunity to create something special for our community while working with partners who care deeply about how and where their products are made.”

The limited-edition rye features a mash bill of 67% organic New York rye, 20% organic heirloom corn and 13% organic malted barley and is bottled at 100 proof, or 50% ABV.
