Tongue in Peat is a Scottish craft beverage company producing an award-winning peat smoked tomato juice designed primarily as a premium Bloody Mary mixer. Founded by Hannah Fisher, whose 12-year career in the Scotch whisky industry — specifically in peated and unpeated expressions — inspired the concept, the company is handcrafted by a small team of fewer than 12 people based on the outskirts of Glasgow, Scotland. The product is the result of years of experimentation beginning around 2013–2014, with the founder working to replicate the kiln-smoking process used in whisky production — substituting malted barley with fresh, in-season tomatoes smoked over a bed of peat sourced from the Scottish Island of Islay. The signature 12-hour cold smoking process over an Islay peat fire bed imparts a distinctively rich, deep, and complex flavour profile that differentiates the product from conventional tomato juices and Bloody Mary mixers on the market. The smokehouse itself was designed and hand-built by Smokehouse Director George Templeton, who brought over 40 years of operational experience in the dairy drinks sector to the project. The company officially launched after nearly five years of development, following the 2018 opening of a companion craft bottling facility called The Start-Up Drinks Lab, which Hannah co-founded to address the lack of small-batch, specialty beverage production infrastructure in the UK. Tongue in Peat has garnered significant recognition since its public launch, earning two Great Taste Awards and being listed in some of the most prestigious hospitality venues across the United Kingdom.
