About

This is a Texas distillery producing sotol, a distilled spirit made from the sotol plant, a resilient evergreen succulent native to the Chihuahuan desert and West Texas. Sotol is both the name of the spirit and of the plant it is made from, and the company positions its product as a category of its own rather than a tequila or mezcal: the sotol plant is not an agave, belonging to a different family, genus and species. The flagship product is marketed as Texas Sotol, made specifically from Dasylirion texanum, the species native to Texas, and described as more flavorful than tequila and softer than mezcal, with a light, crisp, clean profile and a subtle sweet finish. The spirit is made with no added sugars, artificial flavors or colors, and is positioned as smooth enough to sip neat or over ice and versatile enough for cocktails, with margaritas a frequently cited use. Production is fully vertically integrated and described as ranch-to-glass. Raw material is wild-harvested rather than farmed: mature sotol plants are selectively harvested from Texas ranches, with only the heart of each plant removed so the root structure is preserved and the plant can regrow. Harvested hearts are transported to the company's distillery in Driftwood, Texas, where proprietary ovens cook the plants to extract fermentable sugars. The extracted juices move into fermentation tanks where organic yeast is introduced and works over several days to convert the sugars into a flavorful mash. Fermented mash is then distilled in a hybrid still, where distillers refine and fine-tune the spirit before aging and bottling on site. The company notes there was no existing handbook or recipe for making sotol at commercial quality; the process was developed through extensive trial and error, drawing on distillation practices dating back to the Middle Ages. Everything is wild-harvested, distilled and bottled in Texas. The company's origin story traces to its founders encountering the sotol plant while hunting in the Trans-Pecos region of West Texas and learning that prohibition-era Texans had made moonshine from it. Sotol itself has a roughly ten-thousand-year history in the region, where indigenous people used the plant to make food, tools and a fermented beverage. The founders set out to create a high-quality modern version of that forgotten spirit, and the product has since accumulated awards and press recognition as an award-winning Texas sotol. Sustainable foraging is central to the operating model, both as a sourcing method and as a brand position, and the company operates a nonprofit arm, Wild Spirit Wild Places, established in 2021 and dedicated to the restoration and preservation of wild lands across Texas and the United States through research, education and conservation practices. Beyond production, the business operates significant on-site hospitality. Its Driftwood facility includes a tasting room serving cocktails, public distillery tours running Saturdays and Sundays with booking handled through a reservation platform, and a dedicated event space called the Rackhouse available for private events. Sales run through retail and on-premise channels as well as direct purchase through the company's own site, and the hospitality operation doubles as a consumer education channel for a spirit category most drinkers have not encountered.
