About
Ruta Maya Coffee is a specialty coffee importer and roaster with over 30 years of experience sourcing 100% certified organic, shade-grown arabica coffee from indigenous Maya farmer cooperatives in the highlands of Chiapas, Mexico. Founded in 1990, the company operates on a direct-trade model, purchasing beans directly from independently owned Mayan cooperatives rather than through third-party importers or exporters, ensuring farmers receive higher-than-commodity-market prices and supporting indigenous economic development across the Americas.
The company's coffee is grown using traditional Maya agricultural principles passed down through generations, emphasizing ecological balance and long-term land stewardship. All beans are cultivated in volcanic, mineral-rich soil at high elevations, where cooler temperatures and harsher climate conditions slow the maturation process and concentrate complex flavor profiles. Shade-grown cultivation methods are a core practice, promoting biodiversity, carbon absorption, and soil moisture retention. Crops are regularly rotated to maintain soil fertility, reducing the need to clear forested land.
Ruta Maya's production process reflects a strong commitment to quality at every stage. Beans are hand-picked to ensure only the ripest coffee cherries are harvested, then small-batch roasted to allow close monitoring for quality control and defect detection. Rather than using water-quenching methods common among large commercial roasters, the company air-cools its freshly roasted beans to preserve optimal flavor. For decaffeinated offerings, Ruta Maya employs the Swiss Water Process, a chemical-free method that removes 99.9% of caffeine while preserving the bean's natural flavor characteristics.
The company's coffee is entirely free of chemical fertilizers, pesticides, and herbicides, including DDT, marathon, and benzene hexachloride, resulting in cleaner beans and a reduced environmental footprint throughout the supply chain. Its certified organic status and shade-grown designation position Ruta Maya competitively within the premium and specialty coffee segments, appealing to health-conscious consumers, ethical buyers, and foodservice operators seeking differentiated, traceable sourcing.
Beyond its product line, Ruta Maya maintains active community and academic partnerships, including with The Mesoamerica Center at The University of Texas at Austin, where it co-sponsors the annual Mesoamerica Meetings symposium and funds a scholarship for students studying abroad in Latin America. The company also supports the Shark Research & Conservation Program at the University of Miami. Ruta Maya's former Austin-based retail location, Ruta Maya Coffee House, was recognized by Food & Wine Magazine as one of the top ten coffee bars in the United States, underscoring the brand's credibility within the specialty coffee industry.
