Koot

A Mexican specialty condiment brand producing small-batch salsa macha, chili crisps and chili-dusted dates under the name KOOT, the Maya word for eagle. Products are made in Mexico from recipes the company describes as family recipes prepared the traditional way, in batches small enough to control quality, and are formulated with no preservatives and nothing artificial. Sourcing is presented as a national ingredient hunt across Mexican regions including Oaxaca, Jalisco, Sonora and Baja California, with specific chiles chosen per product: smoky Morita peppers for the salsa macha, and jalapeno, serrano and habanero for the chili crisp range. Sweet Medjool dates dusted with real chili round out the line as a snack format. The flagship salsa macha is a chili oil built on Morita peppers in olive oil with pumpkin seeds, sunflower seeds, sesame seeds, almonds, garlic and sea salt, packed with crisp chile and seed pieces and positioned as a versatile finishing condiment for eggs, vegetables, steak, chicken, seafood, avocado toast, tacos and sandwiches. It is sold in 8.34 ounce (239 g) jars with an eight-month shelf life and ambient, cool dry storage. The company sells direct to consumers through its own online store, which carries customer reviews, and runs a separate wholesale program with a dedicated enquiry route for trade buyers. Positioning centers on clean, simple ingredient decks, traditional Mexican technique and cultural heritage rather than mass production.
