Dovetail Brewery is a Chicago-based craft brewery that specializes in continental European beer styles and traditional brewing methods. Located at 1800 W Belle Plaine Ave in Chicago, Illinois, the brewery focuses on producing authentic German, Czech, and Belgian-style beers using time-honored techniques. Their core offerings include five flagship beers: Hefeweizen (German wheat beer with clove and fruit aromas), Helles (their flagship easy-drinking lager), Kölsch (refreshing, mildly spicy ale), Pils (German-style pilsner inspired by Franconia), and Vienna (copper-colored lager brewed with 100% Vienna malt). The brewery also produces year-round selections like their golden Lager and smoky Rauchbier, seasonal offerings including Czech Dark Lager, Festweizen, Holiday Bock, and Hopfenlager, as well as spontaneously-fermented beers in the Senne Valley tradition such as Fraise, Framboise, and Quetsche aged on various fruits. Dovetail operates a taproom that serves as a community gathering space, embodying their philosophy of making 'beer for the fine tradition of hanging out.' The taproom is open Monday-Thursday 12pm-10pm, Friday-Saturday 12pm-11pm, and Sunday noon-8pm. They offer different pour sizes instead of flights, allowing customers to sample any beer on tap.
