7th Settlement

7th Settlement Brewery is a community-supported craft brewery and farm-to-table brewpub located in Dover, New Hampshire — historically the oldest permanent settlement in New Hampshire and the seventh in the New World. The establishment takes its name and identity from this rich local heritage, positioning itself as a hub for community collaboration, culinary craftsmanship, and innovative craft brewing. The brewery produces small-batch, handcrafted beers brewed entirely on-premises, with beer traveling just 41 feet from tank to tap, ensuring exceptional freshness and quality in every pour. The brewing program emphasizes creativity and local inspiration, utilizing locally sourced ingredients wherever possible and collaborating closely with regional farmers, brewers, and culinary professionals. Beyond its brewing operations, 7th Settlement functions as a full-service farm-to-table restaurant, maintaining active sourcing relationships with more than 65 farms and fishermen throughout the New England region. This extensive local supply network allows the kitchen to deliver a rotating menu of scratch-made artisan cuisine prepared by in-house chefs. The farm-to-table model is deeply embedded in the company's operational philosophy, with a stated goal of supporting and insulating the local agrarian and gastronomic economy of the greater New Hampshire region. The brewpub also operates a full bar program featuring a curated selection of spirits, cocktails, and house-crafted draught beers. The beverage program demonstrates a preference for regionally produced spirits, including locally distilled New Hampshire products, alongside nationally recognized premium spirits brands. This dual focus on craft beer and culinary excellence distinguishes 7th Settlement from single-concept taprooms or standard restaurant operations. The company places significant emphasis on staff expertise, with trained servers and bartenders prepared to educate guests on beer selections, food pairings, and cocktail options. Community engagement is a core element of the brand identity, with the brewery actively supporting local farmers, business owners, and community members. The operation targets local residents, food and beer enthusiasts, and visitors to the Seacoast New Hampshire region who value locally sourced, high-quality food and beverage experiences in an authentically community-rooted environment.
